Ingredients
  

  • 4 cups Romaine Lettuce & Kale chopped
  • 1 cup Chickpeas drained and rinsed
  • ½ cup Feta Cheese crumbled
  • cup Pita Chips crushed for added crunch
  • ½ cup Red Cabbage & Carrots shredded
  • ¼ cup Greek Dressing store-bought or homemade
  • 1 tbsp Olive Oil optional, for extra richness
  • 1 tsp Dried Oregano for Mediterranean flavor
  • Salt & Pepper to taste

Optional Additions

  • Grilled Chicken for extra protein
  • Cherry Tomatoes halved, for freshness
  • Cucumbers sliced, for crunch
  • Avocado sliced, for creaminess
  • Toasted Almonds or Walnuts for added texture

Instructions
 

Step 1: Prepare the Ingredients

  • Wash and chop the romaine lettuce and kale.
  • Drain and rinse the chickpeas.
  • Slice any additional veggies like cherry tomatoes or cucumbers.

Step 2: Assemble the Salad

  • In a large salad bowl, combine the lettuce, kale, chickpeas, red cabbage, and carrots.
  • Add crumbled feta cheese and crushed pita chips for crunch.

Step 3: Add Dressing & Seasonings

  • Drizzle the Greek dressing over the salad.
  • Sprinkle dried oregano, salt, and pepper to taste.
  • Toss everything gently to coat all ingredients evenly.

Step 4: Serve & Enjoy!

  • Serve immediately as a light meal or side dish.
  • Pair with grilled chicken, salmon, or tofu for a complete meal.
  • Store leftovers in an airtight container (without dressing) for up to 2 days in the fridge.
