Instructions
 

Step 1: Prepare the Ingredients

  • Wash the spinach and pat it dry. Chop it into small pieces.
  • Crumble the feta cheese and set it aside.
  • Crack the eggs into a bowl, add milk or cream (if using), and whisk until combined. Add a pinch of salt and black pepper.

Step 2: Cook the Spinach

  • Heat a non-stick skillet over medium heat.
  • Add 1 tbsp of olive oil and sauté the spinach for 1-2 minutes until wilted.
  • Remove the spinach from the skillet and set aside.

Step 3: Cook the Omelette

  • Add another 1 tbsp of olive oil to the skillet.
  • Pour the whisked eggs into the pan, swirling to create an even layer.
  • Let the eggs cook undisturbed for about 1 minute, until the edges start to set.

Step 4: Add the Fillings & Fold

  • Sprinkle the sautéed spinach and crumbled feta cheese over one half of the omelette.
  • Use a spatula to gently fold the other side over the filling.
  • Cook for another 1-2 minutes until fully set.

Step 5: Serve & Enjoy

  • Slide the omelette onto a plate.
  • Garnish with extra feta crumbles and oregano if desired.
  • Serve warm with toast, salad, or fresh fruit.
