Step 1: Prepare the Batter
Preheat the oven to 350°F (175°C). Grease a 9-inch round baking dish or cast-iron skillet with butter or non-stick spray.
In a medium mixing bowl, whisk together the flour, sugar, and salt.
In a separate large bowl, whisk the eggs until frothy. Add the milk, vanilla extract, and almond extract. Mix until smooth.
Gradually add the dry ingredients to the wet mixture, whisking continuously until you achieve a lump-free batter. Let the batter rest for 10-15 minutes to enhance the texture.
Step 2: Assemble the Clafoutis
Arrange the raspberries evenly in the prepared baking dish. Sprinkle with ½ cup sliced almonds.
Slowly pour the batter over the raspberries and almonds. The fruit will slightly rise to the top.
Optional: Sprinkle a few extra sliced almonds on top for added crunch and presentation.
Step 3: Bake to Perfection
Place the dish in the preheated oven and bake for 35-40 minutes, or until the edges are golden brown and the center is just set but slightly jiggly.
Remove from the oven and allow it to cool for 10 minutes before serving.
Step 4: Finishing Touches & Serving
Dust the cooled clafoutis with powdered sugar for an elegant finish.
Serve warm or at room temperature with whipped cream, vanilla ice cream, or a drizzle of honey for extra indulgence!
