For the Shrimp:
- 1 lb medium to large shrimp 16/20 per pound, peeled & deveined
- 4 cups water for poaching
- 1 tsp sea salt
For the Marinade:
- ¼ cup extra virgin olive oil
- Juice of 1 lemon
- Juice of 1 lime
- 2 cloves garlic minced
- 1 tsp red pepper flakes optional, for heat
- ½ tsp sea salt
- ¼ tsp black pepper
- 1 tbsp fresh parsley chopped
- 1 tbsp fresh dill chopped
- ½ tsp dried oregano
Step 1: Cook the Shrimp
Bring 4 cups of water to a gentle simmer in a saucepan.
Add 1 tsp sea salt and shrimp. Cook for 2–3 minutes until pink and opaque.
Immediately transfer shrimp to an ice bath to stop cooking. Let sit for 5 minutes.
Drain and pat shrimp dry with a paper towel.
Step 2: Prepare the Marinade
In a small bowl, whisk together:
Olive oil
Lemon & lime juice
Minced garlic
Red pepper flakes, sea salt, and black pepper
Fresh parsley, dill, and oregano
Let the marinade sit for 10 minutes to allow flavors to meld.
Step 3: Marinate the Shrimp
Toss cooled shrimp with the marinade in a glass container or bowl.
Cover and refrigerate for at least 30 minutes (but no longer than 1 hour).
Serve chilled, garnished with extra herbs and lemon slices.
