Ingredients
  

For the Shrimp:

  • 1 lb medium to large shrimp 16/20 per pound, peeled & deveined
  • 4 cups water for poaching
  • 1 tsp sea salt

For the Marinade:

  • ¼ cup extra virgin olive oil
  • Juice of 1 lemon
  • Juice of 1 lime
  • 2 cloves garlic minced
  • 1 tsp red pepper flakes optional, for heat
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped
  • ½ tsp dried oregano

Instructions
 

Step 1: Cook the Shrimp

  • Bring 4 cups of water to a gentle simmer in a saucepan.
  • Add 1 tsp sea salt and shrimp. Cook for 2–3 minutes until pink and opaque.
  • Immediately transfer shrimp to an ice bath to stop cooking. Let sit for 5 minutes.
  • Drain and pat shrimp dry with a paper towel.

Step 2: Prepare the Marinade

  • In a small bowl, whisk together:
  • Olive oil
  • Lemon & lime juice
  • Minced garlic
  • Red pepper flakes, sea salt, and black pepper
  • Fresh parsley, dill, and oregano
  • Let the marinade sit for 10 minutes to allow flavors to meld.

Step 3: Marinate the Shrimp

  • Toss cooled shrimp with the marinade in a glass container or bowl.
  • Cover and refrigerate for at least 30 minutes (but no longer than 1 hour).
  • Serve chilled, garnished with extra herbs and lemon slices.
