- 4 cups romaine lettuce chopped
- 1 cup cherry tomatoes halved
- 1 cup cucumber sliced into half-moons
- ½ cup red onions thinly sliced
- ⅓ cup Kalamata olives pitted and halved
- ½ cup crumbled feta cheese
- ¼ cup extra virgin olive oil
- 2 tablespoons red wine vinegar or fresh lemon juice
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Optional Additions:
- Grilled chicken salmon, or shrimp for added protein
- Fresh herbs like parsley or mint for extra flavor
- Nuts or seeds almonds, walnuts, pumpkin seeds for crunch
Prepare the Vegetables
Wash and chop the romaine lettuce.
Slice the cucumbers into half-moons.
Cut the cherry tomatoes in half.
Thinly slice the red onions.
