Costco Mediterranean Salad: Fresh, Healthy, and Delicious

A fresh, flavorful, and easy-to-make salad inspired by Costco's popular Mediterranean Salad. Packed with crisp greens, juicy tomatoes, olives, and feta cheese, this recipe is perfect for a quick meal or side dish!

Ingredients
  

  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced into half-moons
  • ½ cup red onions thinly sliced
  • cup Kalamata olives pitted and halved
  • ½ cup crumbled feta cheese
  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar or fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Optional Additions:

  • Grilled chicken salmon, or shrimp for added protein
  • Fresh herbs like parsley or mint for extra flavor
  • Nuts or seeds almonds, walnuts, pumpkin seeds for crunch

Instructions
 

Prepare the Vegetables

  • Wash and chop the romaine lettuce.
  • Slice the cucumbers into half-moons.
  • Cut the cherry tomatoes in half.
  • Thinly slice the red onions.

Make the Dressing

  • In a small bowl or jar, whisk together olive oil, red wine vinegar (or lemon juice), dried oregano, salt, and black pepper.
  • Taste and adjust seasoning as needed.

Assemble the Salad

  • In a large bowl, add the chopped lettuce, tomatoes, cucumbers, onions, olives, and feta cheese.
  • Drizzle the dressing over the salad and toss gently to combine.
